Dessert Recipes

It’s stone fruit season here in Australia and that means it time to start cooking with this seasons sweetest fruits. Today I am sharing with you my Walnut and Apricot Pie. If apricots aren’t in season where you are from canned works perfectly fine in this recipe too. Enjoy!

1 large sheet of sweet short crust pastry, homemade or store bought is fine
2 eggs, whisked
1 can of condensed milk
1 teaspoon of vanilla
10-12 apricots peeled and sliced into halves
1 cup of walnuts

Preheat your oven to moderate and grease and line your pie dish. Evenly layout your pastry onto you dish ensuring the edges are covered and pushed down. In a large bowl whisk together your eggs, vanilla and condensed milk. Pour this mixture into your dish and top with the apricot halves and walnuts. Bake for about 30-40 or until the pastry is crisp and the centre has thickened.This recipe serves around 8. Enjoy!

Savoury Delights

** WHAT YOU WILL NEED **

1kg of potatoes
3 tablespoons of ground paprika
1 tablespoon ground ginger
2 tablespoons cumin seeds
1 tablespoon chilli powder
1 tablespoon ground coriander
Drizzle of oil

Pre-heat your oven to moderate and line a baking tray. Par-boil your potatoes with skin. Allowthemto entirely cool before cutting into wedges. Leave the skin on as it crisps up nicely. In amortarand pestle lightly grind together your spices.Now generously coat your potatoes in the spices and transfer to the lined baking tray. Drizzle the potatoes with some oil and bake for about 20 minutes or until crisp. Serve with some sea salt. Enjoy!

Sweet Treats

Cookies have to be my all time favourite treat to not only eat but bake as well. These White Chocolate and Raspberry Cookies are super easy to make and taste amazing. If you cannot find dried raspberries any dried fruit works well in this recipe. Next time I think I will try some goji berries or mango pieces.

** WHAT YOU WILL NEED **

2 cups of flour, sifted
4 tablespoons of unsalted butter
1 teaspoon vanilla
1/2 cup melted white chocolate
1 cup caster sugar
1/2 cup dried raspberries (I bought mine from a Health Store)

** WHAT TO DO **

Preheat your oven to Moderate and grease and line your baking tray/s. In a large bowl cream together your sugar and butter along with the flour. Once the mixture has lightened and the sugar has dissolved stir in your melted white chocolate and dried raspberries. Now gradually sift in you flour and knead your mixture until a soft dough has formed. Roll your dough into tablespoon sized balls, flatten and place about an inch apart on your pre-prepared baking trays. Bake for about 15 minutes or until just golden. Makes about 15 cookies.

Sweet Treats

Last Christmas my lovely Grandparents bought me a selection of kitchen gadgets that I could play around with, one of them being a waffle iron. After a bit of experimentation here’s what I came up with; Pumpkin Spice Waffles. I hope you enjoy them!

2 cups of self raising flour
2 eggs
2 tablespoons pumpkin spice, my recipe here
2 cups milk
2 tablespoons sugar
1 teaspoon vanilla
Powdered sugar & berries to serve

Preheat and grease your waffle iron. In a large bowl sift in your flour and add your pumpkin spice and sugar. Whisk in your eggs, vanilla and milk. Continue to mix until a smooth batter has formed and pour into your waffle iron. Cook until crisp. Serve with some fresh berries and a light dusting of powdered sugar.

Sweet Treats

Ask any sweet tooth and they’ll tell you when it comes to sweets nothing beats a gooey, rich chocolate cake. This Double Chocolate Loaf cake is so rich and tasty you’ll be asking for seconds. I hope you enjoy it as much as I do! Feel free to spice it up with the addition of chocolate chips, nuts or even dried fruit.

200 grams unsalted butter
1 cup brown sugar
1 teaspoon vanilla
2 eggs
1 cup dark chocolate buttons, melted
2 cups self raising flour, sifted
3 tablespoons Dutch cocoa
1 cup buttermilk

Grease and line a loaf tin and pre-heat your oven to Moderate. In a large bowl beat together your sugar, butter and vanilla. Whisk in your eggs then gently fold in the cooled melted chocolate. Gradually sift in your flour and cocoa powder. Mix in your buttermilk and beat until well combined. Pour you batter into your tin and cook for about 30 minutes of until a skewer just comes out clean. Serves around 10. Enjoy!
