This delicious pizza has a unique and flavor-packed base of creamy peanut sauce, and is then topped with cooked chicken, julienned carrots, slivered scallions, fresh cilantro, and toasted peanuts for a lovely crunch. If you love CPK, or love making your own homemade pizza at home, you’re going to have so much making this Thai chicken pizza! The flavor is unique, and it’s very easy to make.

The base of the pizza is a creamy thai peanut sauce, which gives it a sweet, savory, and slightly spicy flavor. The toppings are just cooked chicken, carrots, green onions, fresh cilantro leaves, and toasted peanuts. CPK also use crispy bean sprouts, but I left them out just because I didn’t have any on hand.

  • Pizza Dough:You may use any type of dough for this pizza, whether it’s pre-made or homemade, it’s going to be delicious! I recommend that you make your own homemade pizza dough, I have a great recipe for you, and if you have a bread machine, you can easily make this bread machine pizza dough.
  • Chicken:You need about half a cup of cooked chicken here. I thawed a chicken breast,boiled and shredded it, you can also use rotisserie chicken if you have it.
  • Peanut Sauce: This sauce is very simple, you will need creamy peanut butter, grated garlic and ginger, soy sauce, rice wine vinegar, sesame oil, sriracha (optional, can be substituted with red pepper flakes), honey, and water.
  • Cheese: I’m using shredded mozzarella cheese just like CPK!
  • Other Toppings: Slice up some scallions (you can substitute with yellow or red onion if needed), grate a small carrot, and roughly chop fresh cilantro and toasted peanuts.

How To Make Thai Chicken Pizza

  1. Preheat your oven to the highest possible temperature (mine goes up to 550°F/290°C). If you’re using a pizza stone, place it in the oven to preheat as well. (if you want to bake your pizza on a cookie sheet or in the air fryer, see the instructions in the recipe card below).
  2. Take the pizza dough out of the fridge, you want it to come to room temperature.
  3. Make the sauce, in a bowl combine all of the sauce ingredients and whisk until smooth and creamy. Set aside.
  4. Sprinkle the pizza peel with semolina to prevent the dough from sticking, then shape/stretch your dough gently with your hands into a 10 or 12-inch circle. Before adding any toppings, make sure that the pizza can slide off onto the pizza stone easily. If not, just lift it up gently and sprinkle with more semolina. Don’t push the dough too hard, and start working it from the center. Leave the edges puffed up for a great pizza shape and bubbles.
  5. Spread ¾ of the thai peanut sauce on the crust, top with mozzarella cheese, chicken, carrot, and green onions. And of course you can add your favorite toppings at this stage, just make sure not to over do it with the toppings as you want the ratio of pizza dough to toppings to be balanced.
  6. Bakein the preheated oven for 4-5 minutes, then switch on the broiler and bake for 3-5 more minutes but keep an eye on it as the top bubbles and browns.

  1. Drizzle with the remaining peanut sauce, garnish with chopped fresh cilantro, and crushed peanuts. Slice and serve.

Make homemade pizza dough and store it in the freezer so that you always have some ready to make a delicious Thai Chicken Pizza! You can even add the toppings before freezing.

Ingredients

  • 1 pound pizza dough
  • 1 ½ cups shredded mozzarella
  • ½ cup cooked shredded chicken
  • ¼ cup carrot grated
  • 2 tablespoons chopped green onion
  • 2 tablespoons chopped cilantro for garnish after baking
  • 2 tablespoons roasted peanuts chopped

For the sauce:

  • ¼ cup peanut butter smooth
  • 1 tablespoon honey
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons rice vinegar
  • 2 tablespoons water
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon fresh garlic grated

Instructions

Notes:

  • Add Olive Oil: You can brush the edges of the crust with olive oil if you’d like to get them extra browned and tasty. Sprinkle the crust with a small amount of garlic salt for an extra treat!
  • Shape the Dough By Hand: Avoid using a rolling pin to make your pizza. The pressure from the pin will deflate the dough and you won’t get the bubbles and pockets of air that you want. Be sure to leave the dough thicker on the edges to create a nice pizza crust.
