Prepare for a flavour explosion with these Spicy Egg Muffins! This bite-sized breakfast packs a spicy punch and is super easy to whip up.

Everything tastes better when you add cheese! I love using cheese in my recipes to add extra flavour and loads of ooey gooeyness! Armstrong Cheese, a favourite cheese brand of mine, recently came out with three new delicious cheese flavours: Garlic and Herb, Havarti and Monterey Jack with Jalapeno. Yum!

If you aren’t yet acquainted with Armstrong Cheese, let me fill you in. They are a Canadian heritage brand with roots in British Columbia dating back all the way to 1902. Their cheese is naturally aged just like the way of the cheese artisans from times long ago.

I couldn’t wait to try out one of the new flavours in a recipe. I selected Monterey Jack with Jalapeno because I’m a spicy lovin’ gal and created these mouthwatering Spicy Egg Muffins. Prepare for a flavour explosion, folks.

This simple breakfast is also suitable for those of you following low carb lifestyles. It has easy to find ingredients like Armstrong Monterey Jack Cheese with Jalapeno, hot Italian sausages, peppers, onions, eggs and jalapeno.

The first step is to cook the sausages and veggies. You’ll want the sausage to be browned and the veggies soft and tender. It smells amazing and I could have stopped and eaten it then and there. Don’t worry, I had willpower and only snuck a few bites. I had to make sure the flavouring was right!

My family was actually fighting over them. We loved them. I tried to use the reasoning that I needed to have a few extras because it was my recipe I’d be sharing on my blog. I don’t think that excuse went over too well because I was met with a few dirty looks.

FAQs

Why are my egg muffins soggy? ›

If your egg muffins are soggy, you likely used a lot of veggies with high water content. Next time, saute the veggies before adding them to the egg cups to remove the excess moisture.

Why do my egg muffins fall? ›

Egg Muffins Always Deflate

But give them a few minutes, and they flatten out substantially. The same goes for your breakfast muffin. It is going to shrink partially because of the main ingredient. Eggs don't automatically deflate on their own, but once you introduce air into the mix, nature takes its course.

How do you keep muffins moist and fluffy? ›

If you're hoping to create extra moist muffins or aren't going to eat them for a while, consider using paper liners instead. Paper liners will help keep the moisture inside of the baked goods, allowing the muffins to remain fresher for longer.

What does adding an extra egg do to muffins? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

What ingredient keeps muffins from falling apart? ›

How do you keep muffins from falling apart? It's gluten. See, to a baker, gluten holds the whole world together.

Why are my egg muffins GREY? ›

The change in color is all but a result of a chemical reaction caused by too high of a temperature: What happens is the sulfur in the egg white and the iron in the egg yolk combine and react with the heat, creating a compound called ferrous sulfide, which is what can give eggs a grayish color.

Should I beat eggs for muffins? ›

Beating the eggs adds air to the egg whites and should lift the batter, though how much depends on what other ingredients are in your recipe. Heavier ingredients, such as oatmeal, will lessen the egg whites' leavening effect.

How do you keep muffins crispy and not soggy? ›

Letting them cool off is important, as hot muffins in an airtight container can produce condensation that causes the muffins to become soggy. Line the bottom of the container or plastic bag with a paper towel before placing the muffins inside in a single layer.

Why is my egg bake watery? ›

If your egg bake turns out runny it is usually from excess moisture being released into the egg bake, usually from any added vegetables. To avoid this, sauté the vegetables and any dense meats before assembling the egg bake.

How do you fix soggy scrambled eggs? ›

Scrambled eggs can become watery if they are overcooked or cooked at too high a temperature, causing the proteins to squeeze out moisture. Cooking them gently over low to medium heat and not over-stirring can help prevent excess moisture.

Why are my muffins gummy? ›

Overbaking or underbaking the muffins.

Take the muffins out of the oven too soon and they're sticky and uncooked at the center. Bake them a few minutes too long, and those once-moist and fluffy muffins run the risk of turning dry.
