Brown Sugar Glazed Carrots

We eat lots of roasted veggies at our house, especially during busy weeknights. These brown sugar carrots are a staple recipe, as well as parmesan broccoli, roasted asparagus and baked sweet potato fries.

These glazed carrots are so easy to make and are a delicious side dish for any dinner. We love making roasted parmesan carrots or brown sugar glazed carrots as well, but when I’m craving something a little sweeter, these candied carrots hit the spot.

They’re not too sweet, but have the perfect amount of glaze on them to cut the cravings.I love how the butter and brown sugar caramelizes together and then turns a little crisp in the oven. So delicious!

3 Simple Ingredients

  • Carrots (sliced or baby carrots)
  • Brown sugar
  • Butter

How to Make Glazed Carrots

  1. BOIL. Add 1/2 inch water to an oven-safe skillet over medium heat. Boil carrots for 3 to 5 minutes.
  2. COAT. Drain the water and then add in the butter and sugar. Stir until coated. Sprinkle with salt and pepper.
  3. ROAST. Place carrots in the oven and roast 10-15 minutes, or until fork tender and the sugar has caramelized. Alternatively, you can keep cooking them in the pan until tender.

Crockpot Version

These glazed carrots can also be made super easily in the crockpot. Simply place all of the ingredients in the slow cooker and cook on high for 3 hours. They won’t start caramelizing in the crockpot…so if you want them to caramelize, roast in the oven for an additional 5 minutes at 425°F.

Cooking Tips

  • Type of carrot – This recipe can be made with any type of carrot, but I prefer to peel large carrots and slice them into about 1/2″ by 3″ pieces. You can also use baby carrots, but they will need a little longer to cook. If I’m using baby carrots, I’ll usually slice them in half.
  • Healthier swap – For a healthier alternative, you can sub honey for brown sugar.
  • Make ahead – I prefer the crockpot cooking method if I want to make these carrots ahead of time. Add all ingredients to crockpot and cook on low for 4-6 hours or on high for 3 hours. Then when ready to serve, quickly roast them in the oven for about 5-10 minutes so that they get caramelized.

Heat the olive oil in a large sauté pan, then add the carrots and parsnips and toss to coat in the oil. Add the thyme, cinnamon, star anise and some seasoning. Cook over a medium heat for 15-20 minutes, turning the vegetables frequently, until golden brown and almost cooked through.

How can I make my carrots taste better? ›

Don't cook them in water. Two good ways to cook carrots: braising and roasting. Both bring out the flavor and sweetness of carrots, and have better texture as well.

What are the ingredients in carrots? ›

Raw carrots are 88% water, 9% carbohydrates, 0.9% protein, 2.8% dietary fiber, 1% ash and 0.2% fat. Carrot dietary fiber comprises mostly cellulose, with smaller proportions of hemicellulose, lignin and starch. Free sugars in carrot include sucrose, glucose, and fructose.

What goes well with glazed carrots? ›

These oven roasted carrots are a delicious, healthy side dish for any meal! For a simple weeknight dinner, pair them with your favorite protein, a grilled cheese sandwich, lentil pasta, or baked feta.

Why do carrots make my stomach feel better? ›

The fiber in carrots (and any high-fiber vegetables, actually) acts like a natural vacuum cleaner in your gastrointestinal tract, picking up debris as it runs through your body. Carrots can also help keep gut cells healthy, supporting a decreased risk of illness and improving your health overall.

What carrots have the best flavor? ›

Lunar White carrots are very sweet, mild flavored and nearly coreless. This variety is decorative, with straight roots averaging 6 to 8 inches in length. White Carrots are typically sweeter than the orange variety and have a mild, natural taste making them perfect for eating raw.

What makes carrots taste sweet? ›

As carrots grow, they develop terpenoids which are what give carrots their flavour. The sugars develop later on and are stored in the root. Pick too early and you'll be eating the terpenoids, without the sugars.

What not to mix carrots with? ›

For the same reason, one shouldn't mix orange with carrot as when taken together, they may cause heartburn and excess bile reflux. Only a few fruits are starchy in nature. These include green bananas and plantains.

Is it better to steam or bake carrots? ›

No matter which way you cook them, carrots are a healthy choice. Steaming is a slightly better pick since the carrots don't lose as many of their nutrients to the water. (Steaming is also more environmentally friendly since it uses less water.)

Why are my carrots bland? ›

Carrots maturing under warm temperatures or high moisture conditions lack good root color. These carrots also have poor flavor and texture. Plant carrots so they mature under relatively cool temperatures that average less than 80 degrees F. Avoid excessive soil moisture.

Can you perk up carrots? ›

Cut a thin slice off the bottoms and submerge them in a bowl of cold clean water, which you'll place in your fridge on the coldest shelf. Sure, you can use them after about an hour of soaking, but if you ignore them until the next day you should have crisp carrots just begging to be eaten.

Why do my carrots taste bad? ›

However, when terpenoids reach excessive amounts and are no longer balanced with sugar, they give these root vegetables that unpleasant soapy taste. It goes away once you cook the carrots, though, since the heat breaks down these compounds.

What is vegetable glaze made from? ›

Add your vegetables to a pan and fill it halfway up the sides of the vegetables with water. Or, for more flavor, try using broth, orange juice or wine in place of water. Add a touch of butter and sugar with a pinch of salt. The sugar and butter add shine to the glaze.

What is the white coating on carrots? ›

Yes, the white blush that forms on some baby carrots—call it carrot dandruff if you like—is safe to eat. The scuzz of which we speak is the result of the carrots' surface drying out. Regular, mature carrots have a natural protective coating (as do most fruits and vegetables) that helps them retain moisture.
